Stir together the vinegar, light soy, sesame oil and oil. Cut the tofu into bite size cubes and put in a bowl along with the tomatoes. Pour the vinegar mixture over and carefully toss (trying not to break the tofu). Let the tofu cubes cool and then place in a covered dish in the refrigerator.

Steps to make Tofu and Tomato salad:

  2. Wrap the tofu with paper towel, press it under weight to drain. I use a stoneware bowl. Sit in fridge half day/overnight.

  4. Scatter chopped coriander leaves over the tofu and tomato. Sprinkle with several grinds of pepper, drizzle sesame oil over them. Serve immediately.
