  11. Take 1/2 cup chopped Date's
  12. Get Other ingredients :
  13. Take 8-9 Spring Roll sheets
  14. Make ready 1 tbsp Plain flour for slurry
  15. Make ready as required Oil for Deep fry

There is no word in English for 'halwa'. I realized this when I was trying to translate 'gajar ka halwa' into English. This recipe was sent in by Shimja Lukman from Sweden. I am Shimja Lukman, an Indian currently living in Sweden.

Steps to make Carrot Halwa Spring Rolls:
  1. Firstly start to make Carrot Halwa take all ingredients in measurement. Now ready to Prepare the Halwa
  2. Heat the pan and add Ghee then allow it to melt.
  3. When ghee melted completely then add grated carrot's into it. Mix well with Ghee for 2 mins.
  4. Then cover and cook for 15 mins. In between stirring occasionally. Carrot's start to release their juice. It should be a little crunchy.
  5. After add sugar and mix well till they cooked well. Adjust the flame to medium. Now Cover and cook it well about 3-4 mins. Check in between time until sugar dissolves completely.
  6. While sugar juice is enough, add 1 cup of milk stir well until the Halwa becomes thick or milk evaporated into the halwa.
  7. In another pan add Khoya stir continuously on low flame till they released the ghee and slightly melted. Off the flame. Keep it aside.
  8. Next check the carrot and sugar mixture, it's completely cooked. Then add Khoya and chopped dates mix well till they combine all together.
  9. Further, add chopped all dry fruits and cardamom powder mix well on low to medium flame.
  10. Saute for 2-3 mins on medium flame. Now off the flame. Finally Carrot Halwa is ready. Keep aside and Cool it completely.
  11. For Spring rolls:- first prepare the flour slurry or thick paste. In a bowl add 1 tbsp Maida and required water to make a thick flowing consistency.
  12. Now take one Spring roll sheet and place the 2 tbsp or required prepared Halwa on sheet.
  13. Next apply the slurry to around the edges. Then half fold it two sides of edges up to Halwa and tightly roll it. If you need more paste to apply and stitch carefully to end edges. Repeat this process for remaining halwa.
  14. Now heat the Oil in deep Pan. Once oil is heat sufficiently. Add prepared Halwa rolls one by one.
  15. Next fry them both sides till they turn to golden brown colour. After take it out from heat to Kitchen Paper.
  16. Now Carrot Halwa Spring rolls are ready to serve. Serve with Rabdi or as you wish. My Tip:- you can use leftover Halwa to prepare Rolls.
