Ofe onugbu

Hello everybody, hope you are having an amazing day today. Today, we’re going to prepare a distinctive dish, ofe onugbu. One of my favorites food recipes. For mine, I will make it a little bit tasty. This is gonna smell and look delicious.

Ofe onugbu is one of the most popular of recent trending meals in the world. It’s simple, it’s quick, it tastes delicious. It’s appreciated by millions daily. They are fine and they look fantastic. Ofe onugbu is something that I’ve loved my whole life.

Bitter Leaf Soup, also known as Ofe Onugbu is a popular Nigerian soup. Bitter leaf Soup is peculiar to the Igbo tribe of Eastern Nigeria. A lot of non-Igbos shy away from bitter leaf soup (Well, I did for the longest time) because they think that, true to it's name, it is a very bitter soup.

To begin with this recipe, we must prepare a few ingredients. You can cook ofe onugbu using 12 ingredients and 6 steps. Here is how you can achieve that.

The ingredients needed to make Ofe onugbu:
  1. Get Assorted meats (Beef, goat meat, snail, Ponmo, Shaki are ideal)
  2. Prepare 15 Medium Size Cocoyam (Ede)
  3. Get 2 handful Bitter leaves (washed)
  4. Take 1 Cooking Spoon Palm oil
  5. Make ready 2 dry Fish
  6. Prepare 1 stock fish(oboroko)
  7. Make ready 2 handful crayfish
  8. Get 2 Tablespoon Ogiri igbo
  9. Get 4 piece yellow pepper
  10. Take 1 Tablespoons Ground black pepper or 3 Scotch Bonnet blended
  11. Prepare 3 Bouillon Cubes(maggi crayfish
  12. Prepare to taste Salt

The bitter leaves used for this soup ,are properly washed and squeezed ,until there is only a slight taste of bitterness left. This version of bitter leaf soup, requires some special ingredients like ogiri, and a thickening agent usually boiled and pounded cocoyam, achi from the Brachystegia eurycoma plant or mkpuru ofo from the deuterium macrocarpum plant. I would be using ground mkpuru ofo for this recipe. Ofe onugbu is a traditional soup originating from Nigeria.

Steps to make Ofe onugbu:
  1. Start by boiling your meats, start with the tougher meats like Cow leg and Shaki first. When they’re slightly tender, add beef, stock and dry fish.leave to cook till soft….lastly add the snail
  2. While boiling my meat I Thoroughly Wash my Bitter leaf then boil to get rid of as much bitterness as you can. There should be almost no hint of bitterness left in the leaves after this process.
  3. Boil the Cocoyam with the skin on. boil till tender, this should take roughly 15 minutes on high heat
  4. When they are soft, gently peel the skin off and pound till smooth in a mortar. Alternatively, chop them into small chunks and purée in your electric blender or food processor till smooth, then set aside…
  5. Then add the blended cocoyam to the boiling meat stock Add palm oil, ogiri, pepper and grounded crayfish  cover and leave to cook until the cocoyam lumps are well dissolved. !
  6. Add bitter leaves, maggi & salt to taste, do not mix immediately leave to simmer for 5 minutes then now mix. soup is ready. Enjoy with fufu😉

It's made with a combination of bitterleaf, cocoyam paste, red palm oil, dried fish, beef and tripe, crayfish, seasoning cubes, and a traditional seasoning called ogiri igbo. Ofe Onugbu is the only thing I can eat with bitter leaf in it. So, if like me you don't particularly like anything with bitter leaf, I encourage you to give this a try. If you are the kind of person who is sceptical about preparing dishes from other cultures. I will also encourage you to try something new today and expand your cooking repertoire.
