  1. Make ready 1 cup quinoa rinsed and drained
  2. Make ready 1 zucchini, diced
  3. Make ready 1/2 cup sliced mushrooms

  5. Make ready 2 eggs
  6. Make ready 2 tbsp soya sauce
  7. Take 1/2 tsp fish sauce (optional)

  9. Get 1 tsp olive oil, extra virgin
  10. Take 1 small onion, diced small
  11. Get 2 garlic cloves, minced
  12. Make ready salt and pepper
Instructions to make Quinoa "Fried Rice":
  1. In a pot, cook quinoa for about 15-20 min or until cooked and add the frozen veggies in the last 5 min of cooking time and set aside.
  2. While quinoa is cooking, heat a non stick pan and cook eggs (scrambled) remove from pan and set aside
  3. Add oil to pan and cook garlic and onions until translucent.
  4. Add your mushrooms to the pan, cook for another 3 min.
  5. Then add your zucchini, and stir fry another 3 min (I like my zucchini still crisp so I don't usually cook it for long, but you can cook longer if you'd like)
  6. Add your cooked quinoa and mixed veggies to the pan, mix. . Then add the scrambled eggs into the pan.
  7. Add your soya sauce, fish sauce (if using) and salt and pepper to taste. Mix all together. Let sit for 5 min for everything to mingle then serve 😊
  8. Sprinkle with parsley to garnish (optional)
